Superbowl Snacks for WLS

Here are the things that will dress the snack table at my house during the game next week. If you are in the neighborhood stop by!!

Mozzarella Bites

Roast yellow and red bell peppers - or buy them in jars.

Slice into long thin strips and roll around nice little fresh mozzarella balls packed in water. Secure at the ends with a toothpick.

Season w/ sea salt & pepper and drizzle a little white balsamic vinegar and olive oil just before serving.

Garnish with fresh basil leaves cut into chiffonade.

Caprese Skewers

I use marinated bocconcini (means "little mouthfuls"), but you can use regular fresh mozzarella balls packed in water. No rules in this house.

Thread each skewer with a cherry tomato, then a basil leaf folded in half, then a mozzarella ball.
Drizzle balsamic vinegar and olive oil over the skewers before serving.

These are not only visually appealing, but so easy and delicious!

Broccoli and Cheddar Bites

Please don't laugh when you read this recipe, it is terrific and easy. This would be a great vegetarian dinner along with a soup or salad.


16 oz. package of frozen chopped broccoli, thawed and drained of liquid (or fresh steamed broccoli, drained, cooled and chopped)
1 1/2 cup of grated cheddar cheese
1/2 cup lowfat mozzarella cheese
1/4 cup grated Parmesan cheese (even the stuff in the green can is OK)
3 eggs
1/2 cup almond flour
1/4 cup old fashioned rolled oats

Mix all the ingredients together in a large bowl.

With your hands, form small patties and lay on a parchment lined baking sheet.

Bake at 375F for 25 minutes, turning the patties after the first 15 minutes.

Let cool and enjoy!
