Several years ago a friend asked "If you had to give up either beef or pork forever, which would you choose?" After some serious lip chewing I finally answered, "I'd give up beef. Even as much as I fall into rapture at the sight of a rare filet mignon I simply cannot imagine living life without bacon."
This simple but elegant appetizer highlights both bacon and my favorite seafood, shrimp. It will delight your guests and leave you time to enjoy their company and it's as easy to make 200 as it is to make these 12.
12 whole large shrimp, shelled and deveined
4 slices bacon, cut into thirds
2 Tbs soy sauce
Wrap the shrimp in the bacon pieces and fasten with toothpicks or put several on a skewer
Place on a baking sheet and drizzle the soy sauce over them. Bake in a preheated 350F oven for 15 to 20 minutes, until the bacon is cooked to the degree of doneness you prefer
Makes 12
Serves 4 to 6 as an appetizer
