This is one of my simplest recipes - but simple can be tasty - and this one sure is.
Spinach Pie
Nutritional Data per serving (excluding pie shell)

1 frozen pie shell (see Cook's Note)
3 eggs, beaten
1/2 cup milk
1 packet Lipton Vegetable Soup Mix (It's all natural!)
1 cup of cubed Gruyere or Swiss Cheese
10 oz. package of frozen chopped spinach, thawed - finely chopped - with the excess water squeezed out
Mix all together and fill the pie shell. No salt needed because there are enough seasonings in the soup mix.
Bake 350F for 40 minutes.
Cook's Note: I use a store bought pie shell - but I don't EAT the pie shell, I just eat the goodies out of it!
Everyone loves this and it's good at room temperature. Perfect for a brunch buffet or pot luck!
