Cheesy Sausage Balls

Cheesy, porky goodness wrapped up inside a doughball, what could be better? How about one with WAY less fat and almost no carbs? I'm not going to tout these as healthy by any means - at best this recipe gets a B-, but when you HAVE to quell a craving, this will do it for you.

Cheesy Sausage Balls

4 eggs
1/4 cup Greek yogurt
2 tablespoons butter, melted
1/3 cup coconut flour, sifted, 1 1/4 ounces by weight
1/2 teaspoon baking powder
4 ounces sharp cheddar cheese, shredded
4 ounces bulk turkey breakfast sausage

optionally add: garlic powder, hot sauce, cayenne, crushed red pepper, finely chopped onions/scallions, chives, etc...

Whisk together the eggs, melted butter, yogurt and any additional spices.
Combine the coconut flour with the baking powder. Mix into the egg mixture until there are no lumps.
Fold in the cheese and sausage. (may require your hands to get messy)
Form bite sized balls and drop into greased mini muffin tins
If no muffin tin is available, bake on lined, greased, rimmed baking sheet, keeping as mounded as you can so that they won't end up too flat when they spread during baking.
Bake at 400º 10 to 15 minutes until as browned as you can get them.

Makes approx. 2 dozen balls

Cook's Notes:
Make several batches, they can be bagged and frozen, then re-heated prior to serving as a snack or appetizer.
You can use precooked sausage crumbles for convenience if you wish.
