Italian Sausage and White Beans

This is one of those "What's in the pantry?" meals. Meat, beans, greens and some flavor - how could you possibly go wrong?? And all just a few minutes in one pot.

1/2 lb turkey Italian sausage (hot or mild)
1 tbsp olive oil
1 tbsp chopped garlic
1/2 tsp red pepper flakes (optional)
1 can Great Northern beans
1/2 box/bag/bunch Kale (or spinach)


Brown the Italian sausage in the olive oil, onion, garlic and pepper flakes.
Once brown reduce heat to medium
Add in the greens, cook until soft.
Drain the beans and add them
Reduce heat low and simmer, covered for 15 minutes

Cook's Note: This is extremely easy and quick and it's a complete meal in one pan that the whole family will love! You could easily substitute the sausage with any ground meat, but if you do add some more garlic, oregano and black pepper.
Add ins: Bell pepper, canned or fresh tomatoes
For a different twist, use chorizo, black beans and toss in a chili!
